Seligo's unique Artisanal pasta is crafted in small batches in Sicily from 100% organic Sicilian heirloom durum wheat semolina. We use the ancient wheat varieties Timilia and Russello, which have been part of the agricultural heritage and Sicilian biodiversity for hundreds of years. Made with hemp seed, cold-milled into our heirloom durum wheat semolina dough.
Protein: All nine essential amino acids "make a complete protein". Most plant proteins are "incomplete" — missing one or more of the nine essential amino acids your body needs but can't make on its own. You'd normally have to combine foods (like beans and rice) to get the full set. Hemp seed is different. It naturally contains all nine, in proportions the body can use efficiently — closer to how animal protein behaves than most plant sources. Milling hemp seed into the semolina doesn't just add protein, it adds complete protein — which is why this penne comes out 40% higher in protein, with nothing added. No isolated protein, no powder, no fortification claim.
Fats & fiber: Omega-3 and omega-6 in a near 3:1 ratio, plus more fiber, magnesium, and iron than any other regular wheat pasta.
The plant: Hemp needs little water, no pesticides, and improves the soil regeneration.
