Caponata (Sicilian: capunata) is a Delicious staple of the Sicilian cuisine. Made of eggplant (aubergine). 

According to the ancient tradition it is cooked only with Extra Virgin Olive Oil. 

Suitable for Antipasto, on top of Bruschetta or as a Side Dish. 

Ingredients: Eggplant, tomato, celery, olives, extra virgin olive oil, capers, pine nuts, vinegar, salt and sugar.
