THE RITUAL
Every morning in Italy, starts with caffè: Espresso, Cappuccino, Macchiato. You can either drink coffee at the Italian bar or at home, what really matter is to enjoy your coffee ritual and take your time.

Espresso beats the time in Italians' life. When the intense caffè smell comes from the kitchen, you know it is time to wake up. Believe me, once you will smell it, you will never forget it.
For the most of us, coffee smell means home, family, childhood and for many people (for me as well) brew an espresso as first thing in the morning is a Zen ritual. Then there is the after-meal Espresso, mid-afternoon Espresso and Espresso when a friend comes over to my place.
Well, here is the thing. If you go to visit an Italian friend in Italy and he/she decides to introduce you to his/her family and relatives (and we are sure he/she will do that), eventually you will have to drink from 4 to 5 espresso per day. Every time you will step into a house, you will receive the same question “Posso offrirti un caffè? ( “Would you like a coffee?”). Usually, the answer "NO" is not an option. Anyway, your answer probably would not matter, people will act as you would have said yes.

KNOW YOUR MOKA
Once you got your Moka, you will understand that a Moka is something personal which will Brew coffee for you every day (several times per day) for the rest of your life. Yes because of a Bialetti last Forever, you need just to change periodically a gasket. The fascinating thing is that every Moka its unique and day by day you will learn how to improve your brewer abilities.
Despite you may think, Moka is really easy to use. It is made of three parts:
1. Il "bollitore" o "caldaia" (boiler)
Fill the bottom chamber with warm water up to the safety release valve. (If you want to avoid a watery caffè do not overcome the valve).
2. L' "Imbuto-filtro" (funnel-shaped metal filter)
Insert it in the boiler. Then, with a spoon, fill with coffee and create a slight mountain. Don't press with the spoon.



3. Il "Bricco" (Upper part or container)
The upper part is screwed onto the base. This is the container where the espresso will flow.
Hold the base and tightly screw the upper part of the pot onto the base. Remember "tightly screwed" Otherwise, your coffee will come out from the junction.
Prepare and Serve properly
4. Put the moka pot over low heat. Remove it from the heat before the coffee gurgles; in other words, before the coffee is all out. When the moka starts to gurgle close the top.



TIME TO SERVE AND ENJOY THE RITUAL
Serve espresso by filling for 3/4 the espresso cups.
Now we suggest to drink the coffee without sugar or honey, in order to taste all the coffe aromas. But is a good manner (Galateo) to offer to your guest sugar or honey (we suggest not more than 1 teaspoon) a glass of water & some sweets or pastries.
